Watermelon and Bocconcini Salad
INGREDIENTS
1/2 small watermelon
1/2 tub of bocconcini pearls
1 tablespoon of chopped basil or basil flakes
Sea Salt
DIRECTIONS
Remove the watermelon rind and cut the flesh into 1 inch cubes.
Mix the bocconcini pearls (drained) with the watermelon.
Thinly slice the basil and mix with the watermelon mixture.
Sprinkle sea salt over entire salad. This will help brighten the flavours.
1/2 of a small watermelon will yield enough salad for 4 people.
